F O O D P R E P !
Happy Friday! Some may be thinking about the weekend but you know deep down inside you’re thinking about food prepping for next week. It’s a crazy time of year, food prep should be short and sweet!
These potatoes are YUMMY. And most importantly #crispy.
Make these on Sunday and eat them all week long.
I came across a recipe similar to this a few months ago. I tweaked it to my liking and I think they are pretty bomb. And it’s always nice to eat something different besides sweet potatoes every day. 🙃
You'll need:
2.5-3 pounds red potatoes (I used 3lb bag Gourmet petite red potatoes - from Wegmans)
3 TBS Kerrygold butter
2 tsp dill (fresh or dried)
1 tsp parsley
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp sea salt
1/4 tsp pepper
-Chop potatoes in quarters, place potatoes in mixing bowl
-melt the butter in a glass dish
-add all spices to melted butter and mix together
-pour melted butter spice mixture over potatoes and mix together making sure all potatoes are covered
-line a baking sheet with parchment paper
-pour potatoes onto parchment paper/baking sheet, spread out, don't crowd those little babes
-bake @400 for 35-45 minutes
These are a great side for dinner time. I like to re-warm them up in the oven @350 for about 5-10 minutes.
Oh and I also like to dip them in @primalkitchenfoods garlic aoli mayo #YUM
